They are described on the wiki. The attached script is an attempt to make conversion from 2.0 to 2.1 automatic. It is experimental, but because it works on a copy of your configuration files it should be safe to use. You are still encouraged to make a backup of your configuration files before running it, though. The output is written in ~/emc2.1/configs, though that directory isn't yet shown in the configuration picker. Files currently attached to this page:
